Pumpkin, Turmeric and Coconut Soup Recipe

This is a hearty, filling soup which is super easy and cheap to make. You can knock this bad boy up with any type of pumpkin, carrot or even sweet potato, and if you’re feeling the cold (like I am in my house) it should help ease that winter chill. For something different, try toasted coconut flakes on top – I love the chewy texture they give but of course crusty bread with loads of butter is always a winner too.

Note: I love turmeric: its vibrant colour, its crazy little grub-like look and of course its taste. If you can’t find any fresh turmeric, add a few teaspoons of turmeric powder instead. jessiespiby.com
