It was during his time posted to the US while serving in the Australian military that owner Mattis became exposed and subsequently enamoured by the cuisine and later decided that it was too good to not share with Adelaide.
Serves 4 – 6
Ingredients
– 2 kg pork shoulder, skinless and boneless
Marinade
– 3/4 cup extra virgin olive oil
– 1 cup coriander
– 1 tbsp orange zest
– 3/4 cup orange juice
– 1/2 cup lime juice
– 1/4 cup mint leaves, lightly packed
– 8 garlic cloves
– 1 tablespoon oregano
– 2 teaspoon ground cumin
– 1 teaspoon salt
– 1 teaspoon black pepper
Method
1. Combine marinade ingredients and blend until finely chopped.
2. Place in a large zip-lock bag with the pork. Place in the fridge overnight
3. Remove the pork from the marinade and bring to room temperature. Reserve the marinade.
4. Preheat oven to 170C.
5. Place the pork on a rack in a roasting dish. Cover with double layer of foil or lid.
6. Place in the oven and bake for 150 minutes. Then remove the foil and return to the oven for a further 30 minutes to brown.
7. Remove from the oven and rest for at least 20 minutes.
Prepare sandwich
8. Classic Cuban sandwich: French roll, yellow mustard, dill pickles, sliced mojo pork, Swiss cheese. Butter outside and toast in sandwich press,
